Come dinner time I open it up and magically dinner is done. Ok, so it really is not magic, but it sure seems like it after a busy day!

A Healthy Chicken Cacciatore!

Many Chicken Cacciatore recipes call for breading and frying the chicken. This healthy Chicken Cacciatore recipe doesn’t need any of that. In fact there is no cooking needed before putting everything in to the crockpot.

There is plenty of flavor in this Chicken Cacciatore recipe with out having to do much work at all, which is one of the reason I love it so much.

Plus with all the green peppers, onion and mushrooms there are also plenty of veggies in this crockpot chicken recipe that the only real side dish I need is a salad.

I like to keep things easy. Make some pasta real quick while the Chicken Cacciatore is finishing cooking, a salad and some fresh bread makes the perfect meal.

We don’t always have fresh bread, but when I know the family is going to want it with dinner, I plan dinner that needs a fresh loaf of bread for a day I know I will be at the store. Then I just grab it from the bakery section and bread is covered. Sometimes I will turn the fresh bread into garlic bread other times I just slice it and serve it with homemade butter.

How to Make Chicken Cacciatore Freezer Meal

The great thing about this recipe is that you can easily turn it into a Chicken Cacciatore crockpot dump meal. All you have to do is prep your ingredients. Then put all ingredients except the pasta sauce and parmesan cheese in a freezer bag and put it in the freezer.

The night before you want to put the meal in your crockpot, take it out of the freezer and defrost it in the fridge. The next morning just dump the contents of the bag with your ingredients into the crockpot. Add the sauce and the parmesan cheese and cook for 6 hours on high. You can freezer it uncooked for up to 6 months.

If you want to cook the whole dish and the freeze it you can do that too. Just cook everything as directed. Then put it in a tinfoil pan and tightly cover the pan with tin foil. Cool to room temperature and then stick it in the freezer. It will last in the freezer like this for 2-3 months. Then when you want to reheat it all you have to do is defrost it and cook it in a pan on the stove.

When you are making this Crockpot Chicken Cacciatore Recipe you can use jarred sauce or homemade pasta sauce. Normally if I am using homemade sauce I use this homemade pasta sauce. If I want to change up the flavors a bit sometimes I will use creamy tomato pasta sauce.

I like to keep homemade sauce in the freezer, so I try to make batches of it at a time so I have it when I need it. However if you do not have homemade sauce, or don’t want to make homemade sauce jarred sauce will work just fine for this recipe. I suggest using a jarred sauce that has spices and seasonings already, like a tomato basil sauce.

Add the chicken and veggies into the crockpot.

Pour the sauce and diced tomatoes on top of the chicken and veggies.

Then add in the parmesan cheese.

Turn the crockpot onto high setting and cook for 6 hours.
